Chocolate wedding cakes

A moist, decadent Belgian chocolate cake filled and coated with Belgian chocolate ganache which can be flavoured with raspberry, passion fruit etc and/or liqueur or salted caramel. White, milk and/or dark Belgian chocolate can be selected.
The ganache can be covered in smooth chocolate paste and glaze and left plain or finished with chocolate cigarillos or patterned chocolate panels around the tiers. Any cake flavour can be finished in this way.
Chocolate fans or handmade chocolate roses can complete the look, together with fresh berries such as strawberries, raspberries and blueberries, perfect with coulis or cream when serving as the dessert. Alternatively, finish with fresh flowers of your choice.
